Method
For the the kedgeree Scotch eggs, put the milk, bay leaf, onion and peppercorns in a saucepan and bring to a gentle simmer. Reduce the heat, add the smoked haddock, skin-side up, and poach gently for 6–8 minutes, or until the fish is cooked through and flakes easily.
Remove the haddock from the milk, peel away the skin and set aside.
Melt the butter in a frying pan over a medium heat. Add the shallot and garlic and cook gently until softened. Stir in the curry powder and turmeric.
Flake the haddock into the pan and add the cooked rice. Season with salt and pepper, then stir in the parsley, chives and lemon zest.
Add the egg yolk to bind the mixture, then chill in the fridge for at least 1 hour.
Divide the mixture into three portions. Flatten each portion and wrap it around a peeled soft-boiled egg, completely covering it.
Put the flour, beaten eggs and panko breadcrumbs in separate shallow bowls. Coat each Scotch egg in flour, beaten egg and then breadcrumbs.
Chill in the fridge for at least 1 hour to firm up.
Heat the oil in a deep-fat fryer to 180C. (CAUTION: Hot oil can be dangerous. Do not leave unattended.)
Carefully lower into the oil and fry until golden brown and crispy for 5–6 minutes
Mix the mango chutney and mayonnaise together. Serve with the Scotch eggs and pickled cucumber.
