Croque Monsieur

Wholemeal bread

Ingredients

  • 180g/4 slices sliced wholemeal bread
  • 10g/2tsp Dijon mustard
  • 80g grated Gruyere cheese
  • 60g/2 slices ham, Jambon de Paris
  • 30g/2tbsp unsalted butter

Method

  1. Preheat your oven to 180°C.
  2. Lay out the slices of bread on a chopping board and evenly spread ½tsp of Dijon mustard on to each slice.
  3. Top two slices with half of the cheese, add a slice of ham, then the remaining cheese and top with a slice of bread. Use a little pressure to sandwich the ingredients together.
  4. In a large frying pan on a medium heat, melt the butter until it foams, add the sandwiches and cook for two minutes on each side. (Chef's note 1)
  5. Transfer to a baking tray and finish in the oven for 5 minutes.
  6. Slice in half and serve immediately.

Variations

  1. You could replace the ham with a few sautéed mushrooms, or wilted spinach for a vegetarian option.
  2. Vary the mustard to coarse grain, French or English.

Chef's notes

  1. Be sure not to let the butter foam for too long as by the time you have cooked the sandwich for two minutes on each side the butter will be burnt.
